Yummy Cream Pie Recipe

Coconut Cream Pie

I love this recipe because it’s so versatile. The filling makes a great quick pudding for a tasty lunch box or after school treat. Also good for anyone trying to loose weight who might be struggling with intense cravings, this is the perfect healthy go-to treat. The filling for this recipe does not need to be formal. Instead of a pie, make a parfait layering filling with organic berries. Turn it into a summertime barbecue show stopper. Press the crust into a pizza pan and pour on the filling. Top with sliced strawberries, blueberries or whatever fruit you like. Once set it transports easily and needs no refrigeration.

The ingredient that make this recipe work is agar agar. If you have never been introduced to agar agar allow me to share a brief explanation. Agar agar is a vegetarian gelatin substitute made from a polysaccharide in red algae. It can be found in most health food stores in the macrobiotic or Asian aisle. It comes in both flake and powder. If you use powder for the following recipe be sure to adjust the amount accordingly following package directions. Agar agar is both dairy-free and vegan, it does not require refrigeration to thicken. However, refrigeration speeds up the set time. Both flake and powder, and can be used in a variety of dairy-free and vegan recipes. This balance between easy melting and good gel stability makes it the perfect choice for custards, puddings, sauces and even vegetarian marshmallows. As a rule 1 tablespoon of agar flakes to each cup of liquid will create the desired thickness for gelatins and custards.

Don’t be scared off by the price of agar agar. A little goes a long way, a small pack can make many satisfying dishes, both sweet and savory. Hopefully this easy recipe will be just the beginning of a lifetime of culinary possibility. I encourage you to experiment and love what you eat. Food is a gift to the mind, body and senses. Enjoy!

Coconut Cream Pie

This pH friendly treat will surprise and delight all who try it.

 • 2  fresh yellow summer squash OG, coarsely chopped
 • 1/2 cup pure water
 • 2 tablespoons agar agar
 • 2 tablespoons golden flax seeds
 • 2 cups coconut milk OG, canned or fresh made from young coconut
 • 1 tablespoon coconut oil OG
 • 1 teaspoon stevia powder, choose a brand maltodextrin free
 • 1 tablespoon real grade B maple syrup (optional 17g sugar)
 • 1 teaspoon non-alcohol vanilla
 • 1 teaspoon sea salt
 • 1/2 cup sugar-free dried OG coconut flakes, to use as garnish

Steam chopped squash in the 1/2 cup pure water until tender, about five minutes. While still hot place in blender or food processor. Make sure steam can be vented through lid or mixture will explode and possibly cause burns. Process until smooth. Add agar and flax seeds, blend until smooth. Add all remaining ingredients, except coconut flakes and blend on the highest setting until creamy. Taste and adjust flavors. If you decide to add the maple syrup it will add less than 3g natural sugar per piece if cut into six slices, it will also add a real dimension of flavor. Pour all at once into prepared pie crust. Once set garnish with topping recipe (to follow) and coconut flakes.

 • 1 1/4 cup sugar-free dried OG coconut flakes
 • 1 1/4 cup raw pecans
